Grapes are one of the few fruits characterised by high concentrations of tartaric acid (5 - 15 g/l); which, together with malic and citric acid, contributes predominantly to the formation of titratable acidity. Tartaric acid tends to decrease less as the fruit ripens, while in wine it decreases as a result of precipitation together with potassium (potassium bitartrate). This can decrease the hardness of wines, especially reds. 
This acid, when attacked by aerobic lactic bacteria, leads to the formation of lactic and acetic acid (turned) resulting in turbidity and an unpleasant taste. In general, cellar hygiene, anaerobiosis and the use of SO2 are sufficient to avoid this phenomenon.
