Wine can be defined as a potassic drink due to its higher concentration of this ion, 400 - 1500 mg/l depending on the level of tartaric stability, compared to other drinks.
The main role of potassium in oenology, deriving from grapes and strongly influenced by environment and soil, relates to salification with tartaric acid that can result in undesirable crystalline precipitates. The level of tartaric stability of wine, in addition to potassium bitartrate, depends on other factors such as temperature, alcohol content, the presence of protective colloids and pH.
Thus, a significant decrease in potassium concentration after stabilising treatments is an indication of tartaric stability.
