Glycerol is one of the quantitatively most important compounds in wine (5 - 8 g/l). It confers sensations of sweetness and roundness, counteracting the bitter and astringent sensations of the wine; it is also one of the factors contributing to the formation of ‘arches’ when the wine is swirled in the glass.
Modest glycerol contents can be found in musts made from raisined or rotten grapes. Glycerol is mainly produced by yeasts during the first stages of alcoholic fermentation: the NADH formed by the oxidation of glyceraldehyde-3-phosphate cannot release the H+ to acetaldehyde, which has not yet formed, so it reoxidises to dioxyacetonfosphate, which is reduced to glycerophosphate and then hydrolysed to glycerine (glyceropyruvic fermentation). This metabolic strategy makes it possible to maintain an adequate NAD+/NADH ratio and thus the continuation of glycolysis.
