Ethanol is produced through fermentation processes carried out by yeasts that convert sugars into carbon dioxide and ethanol. Its concentration must be checked on the final juice according to the legal limit (0.5% Vol on fruit juices). This kit can be used for low concentrations of ethanol, below 2.5% Vol, both in juice and in the initial alcoholic fermentation in wine.

Ethyl alcohol is the main product of alcoholic fermentation and is found in wines in concentrations between 11 % vol. and 16 % vol. It can also be monitored during alcoholic fermentation, especially during the early stages, in order to accurately identify any additions of concentrated must to achieve the desired alcohol content.
