Grapes contain tens of mg/l of copper but this concentration increases with ripening due to copper-based phytosanitary treatments. Copper can also be found in wine when bronze or brass equipment is used in the cellar. Copper levels generally decrease after alcoholic fermentation as it is incorporated into the lees. Excess copper can lead to unwelcome numbness (copper caskets) and catalyse the chemical oxidation process of polyphenols leading to the formation of free radicals (strong oxidising power). 
Furthermore, monitoring the copper concentration is considered necessary at the pre-bottling stage as it is subject to a legal limit of 1 mg/l.
