The colour of wines is one of the main parameters of sensory evaluation. It also reflects certain characteristics of the product such as grape variety, vintage and state of evolution. In oenology, it is common practice to observe absorbance values at 420 nm, 520 nm and 620 nm as the sum of 420 nm + 520 nm gives the colour intensity of the product, further adding the absorbance value at 620 nm gives the modified colour intensity, while the ratio 420 nm / 520 nm gives the hue of the product. These data are useful and expendable in the objective evaluation of the product both over time and in new vintages. For example, for red wines, a correct ageing process with controlled O2, in which colour stabilisation takes place (polymerisation between tannins and anthocyanins by means of an ethyl bridge) leads to an increase in the contribution given by the wavelength at 620 nm; whereas in the case of unwanted oxidative processes, the contribution given by the wavelength at 420 nm increases.
