Anthocyanidins represent the red pigments of the plant kingdom; they accumulate in the epidermis of the grape exocarp and are found in the wine, after maceration, in varying concentrations of up to 600-800 mg/l in wines obtained from anthocyanin-rich varieties. Their determination is functional for the chromatic characterisation of wines, but also in terms of taste as they intervene in polymerisation phenomena with tannins causing a decrease in astringency. They also tend to react with SO2 (decolourisation) and are influenced by temperature, pH and oxidative conditions during ageing. 
Anthocyanins show a maximum absorbance at 520 nm, and in the absence of a reference standard, the calculation factor used in the method is derived from experimental correlation tests with HPLC analytical methods.
