The concentration of gluconic acid is one of the fundamental parameters to be checked in winemaking during mashing, especially in the case of grapes affected by rot. In fact, gluconic acid, being mainly produced by Botrytis cinerea from the oxidation of glucose, is an indicator of grape health and quality. In extreme cases, the content of this acid can reach 2÷3 g/l, while the optimal concentration found in musts obtained from perfectly healthy grapes is less than 0.1 g/l.
